Mayor McCheese’s Chicken Salad

Mayor Andy Ezard’s recipe:

This recipe really doesn’t have any measurements….you have to experiment. Some like a lot ot mayonnaise and some don’t. Some like a lot of green onion and some don’t or not want any at all. The key is to get Black’s Magic T’soning. That is what makes it delish!

Ingredients:

Shredded chicken

Mayonnaise

Celery

Green onion

Hard boiled eggs

Honey Crisp apple

Black’s Magic T’soning.

Mix to your liking and taste.

Note: Please try new thing and let me know. I use Honey Crisp apples but I’m sure different varieties as well as grapes would be great too. Light Mayo could be used but I need the calories (lol). Have fun with it. My good friend Colin Dobson and the Dobson family have always called me Mayor McCheese from the McDonald’s character in the 70’s and 80’s…look him up (lol).

Rare Review Potato Salad

10 med Red Potatoes, peeled
1/3 c chopped chives and 2 T grated sweet onion (either or)
1/4 c vegetable oil
1/4 c vinegar
1 to 1 1/2 tsp salt
1/4 tsp pepper or more to taste
1/2 c mayonnaise and 1/2 c plain yogurt or 1 c mayonnaise
1/2 c chopped celery
1/2 c chopped green pepper or cucumber (optional)
2 to 3 tsp sugar & 1 to 2 tsp mustard
Paprika for granish

Place potatoes in boiling water…cook until tender 20 to 30 minutes.  In a large bowl combine Chives, vinegar, onion salt and …mix well.  Drain potatoes…cool slightly…Cut into cubes…ad to mix chives mixture in with mayonnaise and yogurt…Fold together and add celery etc. (with sugar and mustard)

Chill for a least 4 hours or overnite before serving.

Potato Salad

12 c cooked potatoes
12 eggs
1 1/2 c celery chopped
1 c onion chopped fine
3 c mayonaise
3 T Vinegar
3 T mustard
1 to 2 tsp salt
1/2  c milk
1 c sugar

Cook potatoes and eggs.  Peel and chill.  Add chopped celery and onions.  Mix remaining ingredients in separate bowl…pour over potatoes and stir only enough to mix.  Best served the next day.  Paprika and pickles may also be added (optional)l.

Spring Salad

1 c Mayonaise
1/2 c sour cream
3 boiled potatoes
3 hard cooked eggs, chopped
1/2 cucumber, diced
3 pickles, chopped
1/4 lb ham, chopped
4 to 5 green onions, chopped
1/2 pkg (10 oz) cooked peas
Salt
1/4 head lettuce, cut into 1/8 inch strips

Mix mayo and sour cream together.  Combine potatoes, eggs, cucumber, pickles, ham, onions, peas and salt to taste.  Add aboutt 3/4 of maonnaise mixture.  Chill.  When ready to serve, fold in lettuce and mound onto a large serving plate.  Ice with remaining mayonnaise mixture and garnish with cherry tomatoes and green onions.
