Chocolate Pie

Cooking with Mary 1/25/17 – Monday, January 23 was National Pie Day

1 cup chocolate chips
1 1/2 cups sugar
1 12 oz can evaporated milk2 eggs
1/2 tsp salt
1/4 cup margarine
1 tsp vanilla
3 TBSP cornstarch
1 pie crust

Melt chocolate chips and margarine in microwave. Beat eggs. Add sugar, cornstarch and salt. Beat until smooth. Blend into chocolate mixture. gradually add milk and vanilla. Pour into pie shell. Sprinkle with chopped pecans and coconut (optional). Bake for 55 to 60 minutes at 350 degrees. Check center with a knife. It should be kind of thick. Let cool and chill in refrigerator for at least 30 minutes. Serve with whipped cream, cool whip, or vanilla ice cream.
